Quod Head Chef
I have been practising my trade for ten years and my inspiration to work is the industry. Most of all I enjoy the adrenaline rush of a busy service when you’re trying to control everything from dressed mixed leaves to neat perfect grill marks on the fish and then finally bringing them together on a plate. I just enjoy all the aspects of a professional kitchen.
I’ve been the Head Chef at Quod for just over a year now and have really enjoyed learning from the owner, Mr. Jeremy Mogford. He has an extensive amount of experience as a hotelier and has taught me as much about food as any Executive Chef I have worked with. Jeremy’s ability to see the food from both a chefs and a diners perspective have taught me to see what contributes to an enjoyable dish without adding the unnecessary frills and garnishes.
